- Cook or bake potatoes until they are tender on the inside but still have that crispy peel on top (you can also microwave them).

This dish is so basic that you most likely already have all of the ingredients on hand, with the exception of fresh corn on the cob.
If you don’t have any, go to your local farmers market or grocery shop (it’s in season right now).
- For this dish, you’ll need roughly six ears of fresh corn on the cob; just shuck them and extract all of the kernels from each ear by hand.
- Toss them in a large mixing basin with olive oil, salt, pepper, and garlic powder until equally coated.
- Then roast them at 425°F for 20 minutes on each side; they’re done when golden brown!
