I dont know about you, but I love kale salads.

Its so versatile!

You may use whatever mix of fresh vegetables you choose.

You may use everything from carrots to beets to red onions.

But whatever you add to the mix, I promise you’ll appreciate the results!

It also has an earthy taste that complements the sweet and tangy flavors of fruit salad or simply plain watermelon.

You may wish to provide something unusual to your visitors on occasion.

This is why I suggest a grilled chicken breast!

I like having my friends here for supper because they always get a sample of my excellent chicken.

You can turn this into a dinner by serving it with a side salad of fresh greens.

The chicken will provide a pleasant twist to what you generally serve, and the kale is high in iron and vitamins A and C.

It’s really up to you, however I like to get creative with my veggie alternatives and sometimes grill mushrooms or cherry tomatoes!

If you do decide to include grilled vegetables, put them over a bed of lettuce to maximize their fresh flavor and crisp texture.

You may also include your favorite veggies such as green beans, tomatoes, cucumber, and carrots here.

You may use whole wheat spaghetti or spiral pasta, and you can even change the ingredients to suit your tastes.

Sweet potato fries are my particular favorite since they are both healthier and more tasty than plain white potatoes.

They also have a considerably lower carbohydrate content, so you can have them alongside other meals without becoming bloated or gaining weight.

I generally serve them with a salad of kale, avocado, and chicken, but if you’re feeling extra brave, top them with bacon, garlic, and cheese.
