Korean short ribs are an excellent grilling option. They are simple to prepare, and the meat is so tasty that you do not need to marinade it before cooking.

However, there is something unsettling about offering a large piece of grilled meat without any accompaniments. So I began to consider what I would serve with them.

The first thing you need is a starch, such as potatoes, rice, noodles, or polenta. You’ll want something to soak up the meat’s juices and make it seem more substantial.

Color is the second thing you desire. Something green or orange would be excellent since your dish otherwise looks like Christmas dinner red meat and white potatoes.

So I cooked white mashed potatoes with green roasted cauliflower and orange carrots.

It was great!

But, instead of mashed potatoes, I’m going to serve them with cheesy polenta, which is faster to cook and even better at soaking up the sauce from the meat.
